Need help with options

I eat plain old southern food. I love veggies, beef and pork. Chicken is ok. I'm struggling finding ways to eat without all that fancy stuff you see in a lot of recipes.

    What exactly is the problem you are having?
    Are you bored with what you've been eating and looking to change things up?
    Are you trying to cut down on calories by preparing your food differently?

    Veggies, beef, and pork can be cooked in a lot of simple ways, without a lot of other ingredients, but we need to know where you're having trouble and what your goals are.

    butter and other rich cooking toppings can be substituted with beef, chicken, or vegetable stock or bone broth, so you still get the liquid and flavor, but not so many calories

    water can be subbed for milk, either in part or in full to help cut calories and still give you the same dish

    arrowroot can be used instead of flour to thicken things

    applesauce can be used instead of oil in most baking recipes

    Not sure specifically what items you are looking to sub, these are probably the most common in southern cooking
