BUTTERNUT SQUASH FRIES!
i was here bored and a little peckish! :blushing:
and i realised that i still had butternut squash in the fridge, so . . .
i cut it up into 'fries' shapes and put them in the oven for about 5 minutes, i put 1 tbs of oil on the baking tray and sprinkled with pepper
YUM YUM YUM! :laugh:
i know i have seen this on MFP a few times, but just reminded myself how yummy they actually are :happy: :drinker:

This is a great idea! I have heard of Sweet Potato Fries, but not Squash Fries. I will have to try them! Thank you:flowerforyou:0

Bake-tastic Butternut Squash Fries!
(Serving Size: 5oz. of squash cut into fries, calories: 65, fat: 0g, sodium: 6mg, carbs: 16.5, fiber: 3g, sugars: 3g, protein: 1.5g)
Ingredients:
1/2 butternut squash
kosher salt
Directions:
Pre-heat oven to 425 degrees. Peel and de-seed your butternut squash. If you're unfamiliar with handling these large items, you may have a little trouble at first. They're fairly easy to peel, but you'll need a sharp knife to cut them. Once your orange friend is peeled and sans seeds, slice it in half. Then cut it up into french fry shapes. We like to use a crinkle cutter to make authentic looking crinkle cut fries, but they'll work any way you slice 'em. Place on a cookie sheet sprayed with non-stick spray. Cover lightly with kosher salt (regular salt works, too, but we prefer kosher salt). Place tray in your pre-heated oven and bake for 40 minutes or so, flipping halfway through baking process. Fries are done when they are starting to brown on the edges and get crispy.
Serve with ketchup, or however else you enjoy fries or sweet potato fries!

i think that 40 minutes is a very long time, butternut squash is very soft, not as hard as carrot or potato
5 or 10 mins usually does me, and i use pepper, or cajun spices or anything to perk them up a little :laugh:0 -

Did you really only bake them for 5 minutes. They take 40 - 45 when I make them, but they sure are yummy!0 -

Did you really only bake them for 5 minutes. They take 40 - 45 when I make them, but they sure are yummy!
i think it was about 5-10 minutes, maybe i had them cut really thin, they were very soft when i ate them and if i leave them in any longer they just get soggy :laugh:
maybe i should leave them in longer, not sure :flowerforyou:0 -

Hand-Cut Fries
You save: 165 calories, 18 g fat, 3 g saturated fat
Ingredients:
1 teaspoon + 1/4 teaspoon salt, divided
2 medium baking potatoes (approximately 8 ounces each)
1 teaspoon extra virgin olive oil
Place a large pot of water over high heat. Add one teaspoon of salt and bring the water to a rapid boil. Preheat the oven to 400 degrees.
Scrub the potatoes well to remove any dirt. First cut the faces off one potato to create a flat surface on 4 sides. Some skin will remain on the sides and the ends. (Do not peel the skin from the potato). Discard the faces and cut the remaining potato into 1/3-inch thick sticks. Repeat with second potato.
Add the sticks to the pot and boil them for 3 minutes (not longer or they will break) then drain them. Let them cool for 5 minutes.
Transfer the par-boiled fries to a medium bowl. Add the olive oil and salt and, using your hands, toss them until they are coated. Then place them on the prepared baking sheet in a single layer so they do not touch. Put the sheet in the oven and bake them for 12 minutes, flip them, and cook them an addition 12-16 minutes or until they are crisp on the outsides and lightly browned. Serve immediately. Makes 2 servings.
Each serving has: 166 calories, 3 g protein, 32 g carbohydrates, 4 g fat, trace saturated fat, 0 mg cholesterol, 2 g fiber, 330 mg sodium
Traditional Hand-Cut Fries have: 331 calories, 3g protein, 33 g carbohydrates, 22 g fat, 5 g saturated fat, 0 mg cholesterol, 3 g fiber, 686 mg sodium
