    I just stir fry it in a bit of olive oil on the stove, or on the BBQ, with onions, tomato, salsa, and a bit of parmesan cheese on top when it is cooked.
  • This is pretty basic and easy and I use it all the time when I am low on ingredients or have extra veggies I don't know what to do with. You can substitute pretty much any vegetable. Basically all you need is some onions, garlic and tomatoes, and a vegetable and some seasoning (I like oregano). Optional ingredients are meat if you want, and also optional for more flavor tomato paste and any kind of stock (chicken, beef, veggie etc..)

    Ingredients for 2 people:

    1 teaspoon olive oil
    1/2 large onion, diced
    2 cloves garlic
    1 can diced tomatoes in juice (or 3-4 ripe tomatoes)
    1 tablespoon tomato paste (optional)
    1/2 cup water or veggie broth or chicken broth if you eat meat. (you can also use boullion cubes)
    1 cup lean ground beef, ground chicken, or ground turkey, or ground pork (this is optional, I don't eat meat so I skip this but you can use any kind of lean ground meat if you like, or even chicken or beef cut into small pieces, really whatever you have on hand)
    2-3 zucchini, cut in half lengthwise and then sliced in to 1/2 inch thick pieces
    Salt, pepper, oregano (or any other seasoning you like)

    Preparation:
    Sautee onions and garlic in olive oil. If you are making it with meat, add it now and cook till lightly browned. Add the can of tomatoes with the juice and everything. Add the optional tomato paste and water or broth along with salt, pepper, oregano or any other seasoning you like. Cook on medium heat for about 10-15 minutes. Then add the zucchini and cook till tender, about 5-10 minutes. Great with rice or brown rice.
  • I like making cream of courgette (zuchini) soup which is lovely and healthy. I usually fry the onion and then add courgette, stock and seasoning to taste. You can add some potato too if you like it thicker. Then I use a hand blender straight in the pot to puree it. You can just alter it to your liking and can add a little drizzle of milk, sour cream or cream if you're feeling a little more indulgent. I usually keep it simple and healthy.

    I use them grated in to minced/ground beef or turkey for burgers. I grate them into a seive/strainer and sprinkle with a little salt to help drain off their water, leave for a little while. I then give them a good squeeze to get as much luquid out of them as possible., very tasty.

    i also love zucchini bread... or zucchini cake with cream cheese frosting. zucchini is one of my favorite vegetables. yum!

    I use pizza sauce and a bit of cheese and make mini pizzas on the zicchini

    I've made this several times in the last couple weeks and I love it. It takes about 2 minutes to prepare.

    Oven at 400. Wash and slice zucchini into frech-fry size pieces. Lightly spray with olive oil (my mister is awesome), sprinkle some italian seasonings, fresh-cracked pepper, and whatever else you like. Roast for about 30 minutes, stirring every 10. I add some salt when they are hot from the oven, then dip them in a little fry sauce, bbq, whatever sounds good.

    An easy, delicious, and healthy way to eat zucchini!

    Also, try them grilled on a charcoal BBQ after dipping in a little EVOO (or nonstick spray) and balsamic vinegar. YUM!
