I have only used it for chicken salad for large groups. I bet you could put it in a tortilla with cheese for a fast quesadilla though... my kids are hooked on them! Or maybe sautee some veggies and throw it in?0

I used to mix it with honey mustard and peanuts and top my salads with it.0

I've made chicken noodles with it before - or even pot pie. I know - you'd just have to make a leaner version...0

I just saw a recipe on Hungry Girl the other day- using canned chicken.
Exploding Chicken Taquitos - they sounded delicious!

I love this recipe i received from my boss. It is excellent, filling, fresh and low in fat, calories, and sodium. hoorah!
I open one can or kirkland chicken breast, cut up one bell pepper, about five stalks of green onions, one jalepeno, one habenero and toss the ingredients together. Depending if you like the spice, you can take out the jalepeno and habenero, and you can also add avocado.
I then get the thin crips triscuts, or the vegetable crackers from fresh and easy, and use the crackers as a chip to eat the "chicken salad". I also sprinkle the salad with fresh lemon juice and Mrs. Dash chile lime powder for an extra kick. Or, if I have it, I spread Wholly Gucamole over the "chips" before layering on the chicken goodness.0 -
Saute with some mushrooms (or just add canned mushrooms) and melt cheese over the top. Eat it with or without a bun.0
