Sneaking in Vegetables

I love vegetables, but find that I'm not eating nearly as much in a day as I should.
Last night I pureed carrots and celery and added them to my soup, and it was delightful!
I'm wondering what I should hide in pasta sauces, chili, ground meat mixes (like burgers), etc.
Does anyone have any favourite vegetables they like to "hide" in their foods?

The possibilities are endless
I hide shredded zucchini and carrots
I hide a serving of peas in guacamole (compliments of Hungry Girl)
chayote squash
shredded eggplant
celery in EVERYTHING
And....tons of veggies hide in my Green Strawberry Protein shake. (Even my 6 year old granddaughter loves it). I put two handfuls of spinach, some carrots and some zuchini in my shake, along with about 6 strawberries. and SF strawberry Davinici syrup. Throw it all in the Vitamix...and voila....a serving of protein, a serving a fruit, and probably at least 2 servings of veggies.0 -
I'm putting shredded zucchini with my lean ground beef tonight for burgers.0

My kids wont eat a whole vegetable, but I blitz mushrooms and bell peppers and put in with my tomato sauce for pasta or pizza topping, shredded carrot in my burgers. Its been years since I have had a homemade soup that hasnt been blended into oblivion, just so the kids will eat it!0

I put spinach in EVERYTHING. In pasta dishes, hamburgers, veggie casseroles, eggs. The possibilities are endless. In the mornings I mix it with strawberries and greek yogurt. I buy almost 50 oz. a week.0

Tomatos, diced onions, diced peppers (Bell, Anaheim or Poblano), and fresh spinach or cilantro in taco meat.
Pasta sauce is great for the above with zuchini, and mushrooms.
I make my chicken spaghettie with pureed butternut squash as the base for the sauce.
There are all sorts of possibilities.0 -

I never knew how popular zucchini was...
