this is one of my favorites, tastes so decadent, and yet low in calories! I use vegetarian stock and less oil than the recipe calls for... http://www.delish.com/recipefinder/butternut-squash-gratin-recipe-ghk01110

You'll have to play with the measurements- the original recipe I had called for over 3lbs of squash and a gallon of stock, but....
add sliced onion, chopped garlic and thick sliced squash/zucchini to a large pot (no oil). when everything starts to cook down, add crushed saltine crackers (works as both thickening agent and salt) and chicken or vegetable stock (becareful not to let it get too soupy like I did the first time). When thickens a bit, take it off the heat and add shredded white cheddar cheese. mix well, pour into baking dish and bake at 350 for 30 min. You can top with more cheese and brown it to make it pretty.0 -
ok here we go....I actually have 2!!!!! #1: 1 -2 zucchini, 1-2 yellow squash, 1 red onion, 1 green pepper, 1 can tomato paste, 1 can crushed tomatoes, I can chick peas (drainer). Saute all veggies in about 1tbsp eeov. add tomato paste, crushed tomatoes, chickpeas....season with 3 TBSP (yes, I mean that) of Basil, 2 cloves crushed garlic. salt to taste if needed. Remove from heat. Stir in 1/2 cup grated parmesan cheese or parmesano regganio. Pour into 9 x 13 glass casserole plate which you have spayed with pam, bake until bubbly (If I'm feeling like being bad, I put a layer of mozzerella on the top.
#2 about 1.5 lbs squash. 2 carrots, 1 green pepper. Cook veggies just until sweating and remove from heat. Spray a 9 x 13 casserole with pam. put 1 cup uncooked brown rice in the bottom of the pan. Add 1 cup chicken broth, 1 cup skim milk. Add veggies. Cover and bake a 350 @ 1 hour or until the rice is cooked....You may have to add more broth or water. When the rice is cooked, sprinkly with 1 1/2 cup sharp grated cheddar cheese.
