I need a side dish recipe for lentils

I am thinking of making lentils as a side dish tonight for some fish I am cooking. I don't have any recipes, as I normally just make lentil soup. But seeing as it's still too hot here to eat soup I'd like to find a healthy side using lentils. Unfortunately me fridge is kind of bare right now so I really don't have any fresh veggies other than onions and garlic(can't get to the supermarket until tomorrow). What are my options?

  • I love lentils and have a couple of links for you that you might enjoy.
    The simplest preparation is just to find the best quality dried lentils you can find (try out some of the exotic ones like the black beluga!) and prepare them according to the package, but use vegetable broth instead of water. It doesn't add but a few calories and makes them taste great! They are even good cold the next day (i like a little hot sauce on them) or sprinkle them on salad/mixed greens.
