    I just eat them raw. Peel the skin, cut into rounds and go for it.
    Just to keep the comments from going crazy - No, they are not poisonous. I never understood why people think you can't eat them raw. I have been eating them for years (very popular in some cultures) and am still kicking. You can eat them raw, it has the sweetness of a carrot but with a little less crunch.

    Jamaican Red Bean Stew (can also be made in the slow cooker)


    Saute until soft: 1 Tablespoon olive oil
    2 Cloves Garlic, minced
    2 Cups carrots, chopped
    3 Scallions, chopped
    1 Sweet potato, chopped

    Pour in to soup pot or
    slow cooker: Sauteed veggies from above
    1 can diced tomatoes
    2 cans kidney beans
    1 can light coconut milk
    1 Cup veggie broth
    2 teaspoons curry powder
    1/2 teaspoon thyme
    1/4 teaspoon red pepper flakes
    1/4 teaspoon allspice
    salt and pepper to taste

    In pot, bring to a boil, add lid and turn down heat. Simmer for 1 hour.

    In slow cooker, cook on low for 6-8 hours. Serve with corn bread. AMAZING!!!

    Black Bean and Sweet potato burritos:

    Peel and cube and boil for 10 mins: 2 medium sweet potatoes

    Meanwhile, heat: 1 Tablespoon veggie oil
    Add: 1 small onion, chopped (cook til soft)
    Add: 3 cloves garlic, minced
    1 green chili, chopped (cook til well incorporated)
    Add: boiled sweet potato
    1 can black beans (drained)
    handful of cilantro
    pinch of cayenne
    1/2 lemon, juiced
    1/2 teaspoon salt
    Mix everything together and pour all ingredients into food processor or blender. Blend 20-30 seconds until smooth-ish. Preheat oven to 350 degrees and spray a baking dish with cooking spray. Spoon potato mixture into whole wheat flour tortillas (or your favorite tortilla). Roll into cigar shape. Place burritos in snug fitting baking dish and cover with foil. Bake for 30 mins. Sprinkle with cheese and salsa(optional).

    OMG, it is SO good! The sweet coconut milk and the spicy chili flakes balance each other out perfectly. My husband and daughter will both eat it and they hate sweet potatoes. I had to sneak them in their diet somehow. ;)

    I love fried sweet potatoes, but instead I will put them in a foil pouch on the grill with with some chopped up onion and green peppers. I drizzle just a little olive oil on them and sprinkle just a little bit of brown sugar on them for the sweetness and then season them with salt and pepper. Yummy! Now I'm crazing them! :happy:

    I don't eat a lot of sweet potatoes, but I love sweet potato fries! Just peel skin and cut into strips, coat with a little olive oil, sprinkle on a pinch of salt, and bake for about 20 mins @ 450 degrees. You'll want to turn them once during baking, and you can cook them longer if you want them crispier. I like them with low-fat sour cream :)

    This but we add chili powder and lime juice too. They are fantastic!

    I most often just eat them mashed (steamed rather than boiled, the texture is better). But sometimes I'll do them pan roasted. Cut them into small cubes and place them in a skillet with about a tablespoon or so of olive oil. Stir them around a bit until the skillet gets good and hot. Then put in about 1/4 cup of water and put the lid on. Let them cook for about 10 minutes. I usually just sprinkle a little Kosher salt onto them before serving. But you could also do a spice blend. Occasionally I'll add some cinnamon, nutmeg, ginger, and paprika.

    i slice them up put on cookie sheet spray with Pam top some cinnamon and bake..... soo good!
