How can I be eating under my calories but not loss weight?

Not enough information here to conclude. Maybe your expectations aren't realistic (it's only been a few days, for example). Maybe you're hitting your calorie goal, but that calorie goal isn't putting you at a deficit. Or maybe you're making some logging mistakes that are resulting in you eating more than you think you are.
If you share more information, we may be able to help.
How long have you been doing this? How did you decide on your calorie goal? Are you taking steps to make sure you're logging accurately (choosing correct database entries, using a food scale, logging things like condiments and cooking oil, etc)?

If you're eating way under your calorie goal you won't be eating enough so your body will hold onto the weight. Try and eat your calories plus half your exercise calories for a week and you should see a loss provided you log everything accurately.2
