Fennel ideas

I love fennel!! But I have never prepared it myself.
I bought one and figured I would give it a try, how hard can it be right?

So I am wondering if anyone has any good ideas for me.....please and thank you :smile:

  • I adore fennell.....a few ideas for you!

    1. add to homemade soups.

    2. Use in place of celery in any salad or dish, really great in chicken salad.

    3. Carmelize with Shallots.....Put 2 tbsp. EVOO in a pan, at medium heat. Chop 2 Shallots (or onion works). Add the fennell, sliced thin....cook until brown edges appear.

    4. Throw it in a pan with carrots and a roast!

    It's delicious with fish, try it roasted/baked with onions and oranges. Also, google braised fennel.

    My favorite is fennel and orange salad:
    - chop fennel into small cubes
    - cut up 1 to 2 oranges into small pieces
    - add olive oil and either red wine vinegar or champagne vinegar to taste
    - salt and pepper to taste
    - place in refrigerator and let marinate at least an hour before serving (stir every once in a while)

    Fennel Gratin-

    Chop fennel bulbs into quarters and arrange in a baking dish.

    Make a low fat cheese sauce using low fat cream cheese, skimmed milk and a little cornflour to thicken. Add some fresh herbs to the sauce (tarragon really compliments the aniseed flavouring of the fennel), and if you like, some crushed garlic.

    Pour sauce over fennel bulb quarters, sprinkle with black pepper and a little ground/grated nutmeg. Top with grated parmesan or grated mature (sharp) cheddar.

    Bake in a med-hot oven for 20 mins until golden and bubbling.

    Serve with fish or chicken or as a dish of it's own!
