Lunch/Dinner on the go

Hey everyone,
I recently came back to college (it's my second week back) and I've realized that I don't have a lot of great ideas for healthy things to eat on the go. By "on the go" I don't even mean something to quickly to eat between classes... It's more like something I can make the night before or that morning and throw in my backpack all day, then eat in class or during a meeting. Preferably with few ingredients and quick prep time. Anyone have any suggestions?

Plain hummus and veggies but mess with the hummus: Mix in.....
thick salsa and cilantro
chopped marinated artichoke hearts
chopped sun dried tomato, basil and sea salt
lime juice and cilantro
pickles diced up
Sandwich thins, any veggie burger mix and laughing cow or WW cheese spread
Most of these can stay at room temp for a while and quick to eat with your hands...0 -
I love Clif bars for a quick snack, but they can get a little pricey. I know you can make your own, but I'm not that creative. Unfortunately, I lean on Subway for lunches a lot... but I'm not in college anymore.
I'd go for snack bags of nuts (almonds are so great) or dried fruit. You can make your own trail mix and control what goes into it if you buy all the ingredients and measure out how much of each. Then you can even write the cal count on the bags and grab and go! Yogurts are amazing, but if you don't have an insulated bag with an ice pack, that could get tricky. Bananas/apples travel really well, as do carrots/celery/other veggies. Sandwiches on whole grain bread with natural peanut butter, yum.

This will sound extremely rabbitish of me... just I seriously like to nibble on raw carrots, slices of cheese and a tin of tuna or salmon. Just remember to pack a fork for the tinned goods.. I've been caught out a few times..

I work out first thing in the morning and don't have time to eat first. Today I mixed yogurt, coconut oil, cinnamon and a bit of organic vanilla. I put that in an insulated lunch sack, with an ounce of organic monterey jack cheese and a nectarine. It was SOOOO good.
You could make a salad and put a home made dressing on the side. Organic extra virgin olive oil or coconut oil, a little bit of apple cider vinegar, add some Italian seasoning and let sit over night.
You could get some sprouted wheat grain tortillas and make wraps with chicken or turkey and some bell peppers and lettuce. dress with home made dressing right before eating.
