Black Bean & Quinoa Burgers

Hi all,
I've had a few requests for this, so thought I'd share. This is a fairly plain version of the recipe - it can easily be doctored with a little cumin, chile powder, hot sauce, etc. My fav. way to serve this version is with a little brown rice, and topped with salsa, avocados, and melted jack cheese. They're also great on a taco salad instead of beef (just crumble and saute them, and don't add water with the (lower sodium) taco seasoning).

Ingredients:
2 - 3 c. cooked quinoa
32 oz. (4c) black beans soaked and cooked from dry, drained (a little on the firm side is good)
1/4 onion, roughly chopped
2 cloves garlic, roughly chopped
1/4 to 1/2 c. whole wheat bread crumbs
1/2c. fresh parsley, roughly chopped

*Combine the parsley, garlic and onion in a food processor. Add the quinoa and black beans (this may need to be processed in a couple batches as it gets really sticky). Transfer to a bowl and mush in the breadcrumbs by hand. The mixture should be moist enough to stick together, but not wet. This might take a try or two.
*Form into approx. 18 patties (nutrition for one below)
*Cook on a pan with a little canola spray, about 5 to 7 min. each side (until it's brown - but you don't want to check it often b/c they will eventually start falling apart. Also, thinner cooks better)

Approximately 98 cal., 18 carb., 5g fiber, 5g protein, 4 sodium (using all 3c. quinoa)

    Do they freeze ok as I would struggle to use 18 patties in a week but like to make things in batches?

    They freeze really well. Some are in my freezer right now :)

    Bump, been wanting to try making my own for a while now, it's inconvenient having to go attempt to find veggie burgers, so I usually give up :sad:

    I've been buying the Morning Star Farms spicy black bean burgers and I love them, so I will certainly give this a try. I see some jalapenos making their way in there. Yum.

  • I don't know what the difference is nutritinally. I just happen to have red quinoa on hand because I love it as a breakfast food, like as you would use oatmeal. When you throw berries and agave nectar on it, it's amazing!

    I wonder if a little vital wheat gluten would make them less crumbly? I might try this recipe out with that, i'll let you know the results! Sounds scrumptious!
