Help! Need Chicken Recipes

So my boyfriend and I went to my parents last night and they gave us a bunch of chicken breasts. We stuck them in a bag with a bunch of other non-food related items and totally forgot about putting them in the freezer. They are still cold, but mostly thawed now.

I don't want to waste the chicken, so tonight after work we're going to be cooking up a bunch and freeze the leftovers for lunches.

We have planned to make BBQ Chicken pizza for tonight, but if anyone could suggest any other healthy ideas, that would be amazing!

    Cook them up in the corckpor or on the grill and then freeze them for chicken salad, fajitas, quesadillas etc. If you feeze them individually after cooking them they will be easy and quick to drefrost later.
  • Season them with no-salt season like Mrs. Dash and put them on a George Foreman Grill (if you have one) or bake. :drinker:

    boil them in a pot of water with veges. yummy easy chicken soup!

    Check out shish tawook marinated chicken and pollo fajitas on allrecipes.com Those are 2 of my staple recipes. Otherwise we just cook in a non stick pan with some garlic, thyme, salt and pepper. Very simple, but great with a green salad.

    Oven fried chicken. Here's the recipe:

    Put 1 lb of chicken breasts in a zip lock bag with 2 cups of buttermilk and 1/4 cup of Frank's Red Hot sauce. Let that sit in the fridge overnight (I let mine set for about 4 hours though).

    Set your oven to 450.

    Mix together 2 cups of panko, 1/2 tsp of smoked paprika, 1/8 tsp of cayenne, 1/2 tsp of garlic powder.

    Dip your chicken in the panko mix and coat it real well. Put it on a non stick baking sheet and bake until done - like 20 minutes.

    This stuff has a tiny bit of kick and a VERY mild buffalo flavor to it. It's also VERY good.
  • We make a currie chicken and rice dinner that is so good....this is what you need

    2 1/2 pounds cut up pieces of chicken
    3 tbs olive oil
    3 tbs curry powder
    1 12oz jar chutney
    1 red bell pepper- thinly sliced
    1 lime cut into wedges
    1/8 cup chopped green onions for topping
    rice- we use jasmine rice, you can use whatever kind you prefer.

    rinse the chicken and pat dry. In a large skillet heat the oil until almost hot, then add the chicken. Brown the chicken until lightly browned on each side. Add the currie powder, chutney & red bell peppers. Simmer for 30 minutes over med-low heat. place rice on the plate, then top with chicken mixture, lime wedges & the green onion and serve... ENJOY :)

    I have a pretty tasty one that I posted there called "Spicy Greek Stuffed Chicken Breast."

    Other tasty recipes include:
    -pulled jerk chicken in the crock pot
    -chicken salad with mandarin oranges, strawberries and toasted almonds
    -chicken En Papillote with low sugar/sodium bbq sauce

    Slow Cooker Mexican Chicken

    Number of Servings: 6

    Ingredients:
    4 boneless, skinless chicken breasts
    1 cup salsa
    1 package reduced sodium taco seasoning
    1 can reduced fat cream of mushroom soup (condensed)
    1/2 cup reduced fat sour cream

    Directions:
    Add chicken to slow cooker.
    Sprinkle taco seasoning over chicken.
    Pour salsa and soup over chicken.
    Cook on low for 6 to 8 hours.
    Remove from heat and stir in sour cream.
    Serve with rice.
    ENJOY!

    That sounds great! I'm so glad my boyfriend's mom gave me a crock-pot! Going to have to try that one out!

    i made this the other day but instead of basil and paprika i used cumin and chili powder and it was AMAZING!

  • Check out Recipe Inspirations by McCorrmick. They are really good. My husband and I love them. They are found in the spice aisle in your supermarket. What's great about them is they give you all the spices you need pre-measured. You add the chicken and a few more ingredients and you have a delicious meal. This week I made the Mccormick's - Chicken Cacciatore with whole wheat pasta. We have also enjoyed the Mccormick - Chicken Marsala. Good Luck!
