Hi there, does anybody have any great okra recipes or ideas? I just got a bunch of fresh okra in my CSA box, and although I've eaten it before I've never actually cooked with it. I was thinking about maybe grilling it, but not sure if that works well?

I'd love to hear any ideas!

p.s. I hate tomatoes, sadly, so the whole stewed-tomatoes-and-okra dish that I've seen in various forms isn't such a good one for me...

In a non stick pan sauté it with grape seed oil or olive oil, with fresh garlic. Cook it until it dries out some,(getting rid of the slime).

I fry them with flour, salt and pepper to taste, add parmesan cheese afterwards.

    THIS! Fantastic!
  • Grilling it with a little EVOO, sale, and pepper is a good start. Or you can bake it in the oven (425 degrees for about 10-15 minutes).

Another idea: try a chicken, okra, and rice casserole -

1 (10.75 ounce) can condensed cream of chicken soup
    1 cup water
3/4 cup instant brown rice (if not instant, you might want to cook it partially first)
    1/4 teaspoon paprika
    1/4 tablespoon ground black pepper
    4 skinless, boneless chicken breasts
    16 ounces of sliced okra

Mix everything, except the chicken, together in baking dish. Put chicken on top. Sprinkle with a little extra salt, pepper, and paprika. Bake at 375 degrees until chicken cooked through.

The slime part of this statement scares me. We don't have ocra up here, so I am really no help at all

Grilled whole okra is aMAAAZing - seriously. I call them okra fries. I just throw them in a foil packet (I don't use oil or seasoning), and grill them up until they have little char spots.

They have the smokey flavor from the grill, and they're like french fries with a crispy outside and gooey inside. I hope you like them if you try it this way
