Based on a 1220 daily calorie intake.. I've had 3 meals + snack and I'm full.
I feel like I'm always ending the day with extra calories 350+
which I know is not good.
Do I continue to eat even though its 1030 pm??

That's happened to me too. Usually in about a week, there is one day when I am very hungry and can't seem to get full. Those days I usually eat more than usual (most times still staying within the limits - sometimes not). I don't feel guilty about it because it's a life issue. Some days I get fuller quicker even though I eat the just about the same foods every day. It all balances out.

I usualy end the day with 600 + calories left , it's fine half the time I struggle to eat the 1300 I'm given to start with let alone the workout extra calories lol
  • Its telling me to eat at least 2000 calories but I always seem to end up the like 800 extra. But I don't feel hungry. Should I try to consume more even if I don't feel hungry?

It is going to be healthier for most people to consume the calories that MFP has calculated for you. Too few calories really don't do your body any favours, and this isn't setting you up for sustaininable long term patterns of eating.

Feeling hungry isn't necessarily a good sign that you need to eat or not eat, I think so many of us are completely messed up from years of dieting and have no idea how much food we need any more.

Try planning your day to account for all those calories - make them small meals or snacks if that works better for you and eat regularly even if you think you aren't hungry. It's not going to do your body any harm to eat 1200 healthy cals a day and will quite probably make you feel really good once you get used to it!

PS. don't worry about eating late at night, that is a personal choice
