Dark Power Brownies
Aw, I just had this all typed up and lost it. Guess I drank too much coffee, all this frantic typing to share with you guys.
I'm a tweaking freak; always editing recipes to make that perfect, delectable, nutrient-filled baked good without all the butter and sugar. This does the trick! Whip these up if you're in the mood for something dark!
Combine:
1/2c. Whole wheat flour
1/4c. Cocoa Powder
1/4c. Special Dark cocoa powder
1/2 tsp. baking powder
1 scoop Designer Whey Vanilla protein
1/4 c. Brown sugar
3 T. Ghirardelli dark chocolate chips, ground fine
2 T. Stevia powder
In blender, combine:
2 c. cooked black beans
2 T. nonfat dry milk
1/4 c. water
1/4 tsp. salt
1 oz. melted unsweetened Bakers chocolate
1 c. pumpkin puree
1 1/2 T. pure vanilla extract
Gently mix dry ingredients into wet just til moistened - Bake @ 350 about 40 minutes til center is set. Check with toothpick for doneness.
Makes 10 dark brownies.
These are amazing on their own --
Or would be good with a peanut butter frosting; PB whipped with neufchatel cheese and a smidge of honey
Or with 1 T. peppermint extract in the batter
Or with strawberries and a dollop of vanilla yogurt (ok ok, or ice cream)
Or eaten warm directly out of the pan with a fork as your children hover around your feet waiting for crumbs.
Your choice.

Review (after actually having tasted one, hehehe):
Not quite as chocolatey as I'd hoped. These are often better the next day, similar to a soft sugar cookie. I still taste some of the creamy bean flavor and not quite enough cocoa. They're good, not super sweet, but I think they need more chocolatey flavor or some peanut butter to enhance it. Or served warm with a drizzle of strawberry jam? Maybe it's just the copious amounts of sugar I miss tasting?
You could use ALL Special Dark cocoa, double the ground-up Ghirardelli chips, or, sigh, add some butter or sugar. I can't figure out how to make brownies as "good" (tasting) as the junky boxed ones. :ohwell:0 -
What would be a good substitute for the whey protein powder. I don't normally use it and would hate to buy a big quantity for just this recipe. How about powdered milk? Sounds yummy and I will try.0

Powdered milk is a GREAT sub for the scoop of whey protein! I'd use 2 T. of powdered milk. You could probably throw in some wheat germ or flax seed meal if you wanted too.
Also, I made a Frosting for these babies last evening:
4 oz. neufchatel cheese
3 T. peanut butter
2 T. lowfat vanilla yogurt
1/2 scoop Whey Protein (again, you could sub powdered milk)
It was slightly sweet, fluffy, and spread nicely over the brownies. Store in refrigerator.
If y'all try this, please give me your advice with how to make these more dark chocolatey tasting without adding a ton of fat and sugar. More Stevia maybe? The frosting really ups the ante, and I'm going to eat one tonight with a serving of chocolate Soy Delicious. The whole thing will be 325 calories. Nice little treat for the weekend!0
