I have a smaller size toaster oven. I use it to broil/bake smaller pieces of things like chicken, fish or beef. or toast bagels/bread

Split open chickens and roast them like this: 4jms9t6brz91.png
You only need salt pepper, mixed herbs and paprika to make a mighty fine bird. For a 1.5 kg chicken grill on the bone side for 40 minutes then turn over to the skin side and grill for for another 40 or so minutes making sure it doesn't burn. To make sure it's finished check the juices run clear by piercing the thigh.

Also you can grill sausages. bacon, musshrooms and tomato as part of a breakfast. Maybe try grilling some cauliflower and other vegies like zuchhinis, bell peppers and wedges of onion to make roast veg salads. Lots of options!

A lot of this is junk but might give you some ideas:

I roast vegetables in mine regularly. Sweet potatoes are my favorite vegetable to roast. I cut the potatoes in roughly 1/2 inch - 1 inch chunks, toss with oil, then season with salt and pepper. Pour onto a sheet pan and place in the oven at 400 degrees. Takes about 20-25 minutes, depending on how crispy you want them.

Another easy and simple dish is roasted cherry tomatoes. I use a pint of cherry tomatoes (whole), one half onion, sliced, a few whole garlic cloves, and olive oil. Mix everything together on the sheet pan and roast at 400 degrees. You can add chunks of boneless chicken (breasts, tenders or thighs) for a one pan meal.

I make personal pizzas in mine every weekend using the pre mixed crust packets mixed with cauliflower. I can get 3 8x8 crusts out of one packet and can usually keep my pizza under 450 cals.
