Roll your own California handrolls if you go easy on the Kewpie mayo. A Japanese girlfriend introduced this to me as an easy way to serve sushi at home. If crab sticks are too processed for your liking sear some tuna steaks and slice thin. Not pictured but we normally have miso soup with this, just to have something hot.

I'm a big fan of stir-frys: usually tofu (I don't eat meat anymore but when I did I bought the thin sandwich tip steaks and cut into strips) and veggies: green beans, bell peppers are what I usually do but things like cauliflower, broccoli, carrot, and baby corn would work too. Sauce can be out of a bottle if you want, I find those too sweet so I make my own: usually soy sauce/grated ginger/gated garlic, sesame oil, red pepper flakes or hot chili oil. Sriracha is good too.

I make a coconut curry soup - chicken broth, one can coconut milk, soy sauce, cilantro, garlic, ginger, lemongrass, sriracha, cumin (all to taste, depending on the day). Poach a couple of chicken breasts in the liquid, remove, shred and throw it back in. Add VERY thinly sliced vegetables (mushrooms, jalapeno, red pepper, cabbage, cilantro, red onion) to a bowl, and ladle the chicken and hot broth on top. Let it sit for a minute or two to cool and down cook the veggies a bit - it's amazing

I love thai coconut curries with shrimp or chicken breasts with loads of veggies in .

I just bought a yellow curry paste and added garlic a bit of stock and a can of real coconut milk. I then add loads of veggies, some lemon (or lime zest, and the final ingredient is the shrimps because it cooks in only a couple minutes.

The picture below is from last night.
