Any suggestions for dinner tonight?

I can have about 800 calories for dinner! What are you all having :)

    Last night I had steak, rice, and salad for just over 800. Yums.

    Tonight will either be:
    chicken breast w/ bbq sauce, Mexican cheese, and bacon bits , then maybe mashed potatoes, and salad again.
    or ground turkey (it was on sale, usually I stick to lean beef) tacos and black beans.

    Not sure of the calories on those but should be less than 800.

    My dinner will be 632 calories tonite.....

    1 cup great value whole wheat penne noodles
    1/2 cup Bertolli 3 cheese sauce
    1 Jennie O Turkey Sausage cut up in with sauce
    1/2 cup great value no sodium green beans


    Little high on sodium side but it should be pretty tasty!

    I've been trying out some low fat side-dishes that I can take for upcoming holidays and potluck parties. I really love this one:

    Zucchini Casserole

    2 medium zucchini, sliced in half and then sliced. (I used one zucchini and one yellow squash b/c I love the combination of those two)
    1/2 cup chopped onion
    2 tbsp butter
    1/2 can fat free cream of chicken soup
    1/4 cup reduced fat sour cream
    1 cup low sodium stovetop stuffing

    In a skillet, saute the onion in 1.5 tbsp of the butter. Stir in 3/4 cup of the stuffing, the sour cream and the soup. Then add the sliced zucchini. Transfer to a casserole dish. Melt the remaining butter and mix with the last 1/4 cup of stuffing and sprinkle it over the casserole. Bake at 350 degrees for 30-40 minutes makes 4 servings ~ 150 cals/serving

    I found it to be very yummy! Try it sometime :happy:

    Browned boneless chops, then placed in a dish top with celery, onion, green peppers and one can of tomatoes broken up with juices.
    served with a baked tater, and cooked frozen peas

    around 600 cal.
  • :tongue: oh ya dessert

    low fat french vanilla yogurt topped with frozen rasberries thawed or fresh.
