    It's for making jerky with ground meat instead of whole muscle. Ground meat jerky has a different texture and is more tender and less chewy.

    Your husband likely knows this if he's made his own sausages, but when using ground meet it is generally recommended to cure it with Prague Powder...1/4 tsp per Lb. I know some people who don't, particularly if they grind their own, but I'm a better safe than sorry kinda guy.

    I've never heard him mention this so I'm not sure that he does. I must inquire. Yes, he grinds his own. Since I don't eat meat I don't tend to get very involved in his culinary adventures, although I have stood there for hours turning the handle when he's stuffed the casings.
