    Your husband likely knows this if he's made his own sausages, but when using ground meet it is generally recommended to cure it with Prague Powder...1/4 tsp per Lb. I know some people who don't, particularly if they grind their own, but I'm a better safe than sorry kinda guy.

    I've never heard him mention this so I'm not sure that he does. I must inquire. Yes, he grinds his own. Since I don't eat meat I don't tend to get very involved in his culinary adventures, although I have stood there for hours turning the handle when he's stuffed the casings.

    This month, I drove cross country twice. Some days, the cost to fill up multiple times equaled the cost of the hotel at the end of day.
