Do I still have to log my exercise when I have my Apple Watch synced to the app?

In the abstract, no. You should enable negative calorie adjustments, though, IMO.
However, there are reports that the way Apple has written its interface to MFP is flawed, and that the math may not work out correctly because of this. I can't give you full details, because I'm not an Apple user, but there have been other threads here on the topic.0 -
You have to both start and end the exercise to get it to record to MFP. If you forget to stop it, it will vibrate gently to ask you if you’re still exercising.
Touch the little green running man, select the type of workout and press start.
They look like this when they record to the app. All of these were logged via Apple Watch. (Disclaimer: doggo has diarrhea. He’s getting all the walkies he wants today.)
I enabled “negative calorie adjustments”, which is a different conversation.
