Healthy Portobello Pizza Recipe

4 portabello mushroom caps
1 onion
1 leek
4 cloves garlic
4 roma tomatoes
1 tbsp fresh squeezed lemon juice
fresh grated parmesan cheese
Chopped basil

Saute onion in 2 tbsp olive oil until soft. Add chopped leek, chopped tomatoes, chopped garlic, chopped basil and lemon juice.
Once ingredients are soft, pile on top of the portabello cap and cover with parmesan cheese. Bake @ 400 degrees for about 12 minutes. I think this would work best on a broiler pan - I will have to try that next time!

Came out to be 150 calories each - most of that coming from the olive oil!

  • you forgot the fresh basil and parsley .... I didnt add the leeks to mine I put artichoke hearts. I ate until I was going to pop.... I was in love....
