Easy veg side dishes?

What are your "go to" non-starchy side dishes? I'm particularly looking for more ideas on what veg to put with chicken or fish to keep lots of variety in my week's meals.

    Brussels roasted with a drizzle of balsamic vinegar and maple syrup.
    Asparagus roasted with a touch of olive oil then once finished tossed in a mix of vegan butter, nutritional yeast and garlic powder.
    Cauliflower roasted with smoked paprika and garlic powder. Bit of oil to get the spices to stick.
    These are out current favorites. Kids love them too.

    I usually just use frozen veg now because it's easy. A few minutes in the microwave and it's done. Although as it's harvest season I've also been having fresh green beans, courgettes fried with just a tiny bit if oil and panch phoron (but whatever spice or herb mix you like would work, they're even nice plain), and corn on the cob.

    Steamed broccoli, asparagus, or cauliflower. I sometimes make veggies in the oven drizzled with olive oil and herbs or even with tomatoes and feta or Parmesan.
