WW Friendly Taco Soup

1 large Onion Diced

1/2 Pound Lean beef

1 package dry Taco Seasoning

1 package dry Ranch Dressing

2 Cans Pinto Beans

1 Can Corn or Hominy

2 Cans diced Tomatoes

1 Can Water

1 sm Can Green Chilis Chopped

1 sm Can tomato Sauce


Brown meat with onion. Add remaining ingredients, cook for 30 minutes or in Crock Pot for several hours.


***** I used the frozen pearl onions from Trader Joe's instead of chopping an onion. And all the cans I used were low sodium. Sooooo good. I ended up putting in about 2 tablespoons of corn starch in at the end too to thicken the soup, and make it more chili-like. Browned the ground beef, then threw everything in a stew pot on the stove for about 30 minutes, and voila! It was awesome. I didn't add the water in either, I just only partially drained a few of the cans and threw in a little of the sauce from some of them. Made 8 servings @ 259 calories a bowl. I added in a little shredded cheese and crackers on top of that, but that's totally your preference, but did jack up the calories a bit. *****

  • Taco Soup is sooo good, I made mine like this:

    1lb 93% lean ground beef
    1 can kidney beans
    1 Ranch Packet(Hidden Valley)
    1 Taco Seasoning Packet
    1 can Cream Corn
    1 can mexican tomatoes
    1 can green chilles
    1 Onion
    Cook on high 1-2 hours in crock pot!

    It's sooo good, I top it with FF sour cream, reduced fat cheese and tortilla chips!
