Garlic Lime Shrimp

Hey everyone... just made this for dinner the other night (its in my profile pic)
It was so super fast and DELICIOUS so i thought i would share
Shrimp:
1 Bag of cooked, tail off peeled deveined shrimp
thaw in cold water, drain
in a bowl combine lime juice from 1 lime (i didnt have fresh i just used the the bottled stuff)
1 tablespoon garlic
chili powder
parsley
Cumin
Salt and Pepper
Mix around and let sit while you prep the other ingredients
Veggies:
I did half an onion, 1 small zucchini, 1 med portabello mushroom cap, 1 small red pepper. Diced them up, salt and pepper and sauteed in 1 tbsp EVOO
Put 1 tbsp EVOO in pan and pour all of the shrimp contents in, including juice.. cover and cook until done (make sure to stir!) only takes a few minutes since they are pre cooked
heat up some uncle bens 90 second rice (LOVE the whole grain medley roasted garlic)
For me and my husband we split the shrimp, split the veggies and then i had 1/2 cup of the rice and it came out to:
421 calories/ 30 carbs/ 16 fat/ 41 protein
hope someone else can try this, it was great! and took about 20 minutes from start to finish

Is that 421cals per person or for the entire dish? I'm just having a hard time imaging the dish being so calorie heavy when the only real calorie dense item is the EVOO...
