Crockpot Jamaican Pumpkin Soup

Just threw all the ingredients in the Crock to simmer on LOW today.

At dinnertime I'll blend it with an immersible blender and serve creamy with sour cream, green onions, and a garlic-grilled cheese sandwich. Perfect easy autumn dinner. Easily doubles.

2 c. pumpkin puree
4 c. vegetable broth
1 onion, chopped
2 stalks celery, chunked
2 sweet potatoes, chunked
2 tsp. minced garlic
1 tsp. minced ginger
1 T. sugar
2 tsp. salt
1 tsp. turmeric
1/4 tsp. ea. nutmeg and allspice

Would also be good alongside a leafy green salad topped with lean turkey or chicken.

    What's an immersible blender?

    blender (looks like a stick) with the blades on the end that u can put into a pot to blend stuff rather than take the food out of the pot and put into a blender...

    always wanted one of those, now that she brought it up...

    Sure. It makes 8 bowls of soup.

    cal:77 carb:18 fat:0 protein:2 fiber:3 iron:6

    with 1 T. of nonfat sour cream that would add about 15 calories I think.

    My sincerest apologies. In my defense I did find this recipe on another site, title and all. Maybe this is a Jamaican's creation, rather than a Jamaican's typical diet? Regardless.... you have a nice smile :)

    I actually have a Braun (by Cuisinart) and it works pretty nicely if you use it right. I've also made some fat-*kitten* messes by trying to use it in just liquid or with blending ice..... that's a no-no. But it's amazing for soups, after having read the instructions :tongue:

    that, and i've heard jamaicans are extremely limber
