How do I figure out carb/fat/protein percentages if I want to do a low carb meal plan?

Personal preference. Some people figure 100 g or less is considered low-carb. Some people believe you have to be lower than that. Ultimately, calories are what cause weight loss. So set your carbs at something sustainable for you without shorting your protein and fat. I personally have a hard time sustaining if I set my carbs lower than 125.

I suggest you transition slowly. Also it depends on who you ask what low carb is. Most scientific comparisons consider anything under 40% low carb and most of the comparisons generally show low carb to be in and around 40%, so it varies.

Anyway, protein regardless of the diet a person is on and regardless of how many calories they're consuming the bodies requirement to maintain and repair is a constant and in that regard protein should not fluctuate and be a constant number and consequently a constant percentage based on total calories. Also when in a deficit more protein is imo recommended and would consider 1.6g to be a minimum. After that, how many carbs and how much fat you ingest and represent those percentages are up to you. Generally speaking the low carb community generally considers anything from 5% to 20% low carb but it can be higher.
