Cook & Serve Pudding w/ Almond Milk or Coconut Milk
Do you think you could substitute Almond Milk or Coconut Milk for regular milk in Jello Cook & Serve Puddings. As I see it, it would save a bit on calories....and I'm not buying regular milk these days.
It's cold outside and I love warm cooked pudding on cold days.

I used the coconut milk in instant pudding, and it didn't set up right0

From the Kraft web site. Discusses Soy and Rice milk, but not coconut or almond. I called their help line about a month ago and they stated that almond milk would probably not work.

A:
For best results, use 2% low fat milk or whole milk.
Skim, 1% low fat or lactose-reduced milk can also be used but may result in a softer set. Lower fat milk will give a looser set & darker color.
Soy milk can be used to make the cooked pudding but the consistency will be thick. Soy milk is NOT recommended to make the Instant pudding since the consistency will be very soft, however, it could be used as a sauce.
Cooked or Instant Pudding will NOT set using Rice milk or nonfat dry milk, we do not recommend it.

My guess is that it has to do with the lack of fat in the almond milk.0 -
For what I hear almond milk can be substituted in a lot of baked items. So I would guess that it would be your best bet but honestly I have no idea? Sorry! Good luck!0

I did this tonight, used 3 cups of unsweetened coconut milk which was 1/2 cup less, added 1 tsp coconut powder and 1 tsp powdered sugar. It set up fine, I did cook it well and slow cooled it.0

I just tried using almond milk to make instant vanilla pudding and it didn't set. It was thick and tasted great but a little runny. I went ahead and added some sliced peaches to it and it was very good tasting so I's not ruined but I won't try this anymore.0

I read that you couldn't do it with almond milk because of the lack protein. A lightbulb went off and I thought what if I add protein powder!
I added 2 cups of almond milk, 1 scoop of protein powder, and the mix of pudding. I used my immersion blender to get rid of the lumps and then followed the directions.
It worked beautifully and I have perfect pudding in the fridge for tomorrow.

I have used it in the vanilla fat free, sugar free kind that you cook. It set up ok - not as much as regular milk, but in my opinion was good.1

I tried it this week and used almond coconut milk in the sugar free cook and serve pudding mix. It worked great, set up, no problem.0

You can use coconut milk, soy etc with cook and serve but only regular milk works with instant so only buy cook and serve and you'll be fine. The instant requires proteins in milk to start the process.0

It doesn't work in instant pudding but it's supposed to work in the cook and serve. I make tapioca from scratch and use almond milk and it works wonderfully.0

I used almondmilk and even though it was a little less firm, it wasn't watery and still tasty. I just wonder if the calories are less or not? The box says 90 calories with milk, and I would think it would be less but not sure.0
