Question for the Gourmets???

I love cooking!! And I always cook a gourmet dinner for my boyfriend when he gets back from being away (navy boy). I really want to make him a delicious meal next weekend, but they're usually so high in fat.

Does anyone have a HEALTHY gourmet recipe? We eat everything and anything.

    What is his favorite meal? The one meal he looks forward to? Can you post the recipe?
    I do alot of reconfiguring of recipes for my customers who look for healthier options, or allergies, etc...

    I think the best meal to make for someone is the one meal that just speaks to them the most - that being their most favorite meal! ESPECIALLY coming home from the service!

    What's he like? I experiement with food ALL the time and have healthy recipes for just about everything you can think of!!!

    parmesan crusted tilapia served with rice and veggies.. you can max out the rice and veggies by using different ingredients, spices, etc.. and get some fresh veggies that you can mix and steam with complimenting flavors.. simple, elegant, low-cal, & scrumptious!! :-) (and of course this should all be served on fancy plates with a high quality white wine).

    What do you consider gourmet? Seafood is easy to make healthy and light. You could do shrimp or a nice cut of fish baked with lemon zest and make cous cous with scallions and lemon zest. Add a green salad and you have a light, healthy meal.

    I would usually make something rich. Last time I made confit pork belly with crackling, butter bean puree, roasted apple and fennel and anchovie butter scallops! hahahaha, probably 3 thousand calories!
