Baked Zucchini

Ok, I make this on a whim today because I had to get rid of leftover veggies my dad left. I've never been a zucchini eater, and this is awesome!
Preheat over to 350

One small zucchini cut into 1/4 inch medallions
2 teaspoons of olive oil
dash of whatever spices you like ( I used a generic "italian seasoning")
1/4 cup parmasean cheese (you can use more or less to taste)

Coat zucchini in olive oil and spices and lay in a single layer. Sprinkle cheese all over and bake for 25 minutes. Thats it!

EDIT: Make sure you are serving these straight from oven to table, they get cold quickly!

    Yummy. One question- what is medallions mean in cooking? Sorry.
  • Zucchini is also excellant as a side dish when fixed with sauted onions, green pepper, italian seasoning and canned tomatoes. Just cut zucchini into bite size chunks .

    Just like round... disks? Hahaha. Just cut the zucchini 1/4 inch thick and you're set!
