Super Simple Oat Bread

Flatbread made with oats and water is a simpler alternative to traditional leavened bread. Since oats lack gluten, the flatbread won't rise like regular bread, but it can still be a delicious and nutritious option. Here's a basic recipe for oat flatbread:
Ingredients:
- 1 cup rolled oats (or oat flour)
- 1/2 cup water
- 1/4 teaspoon salt (optional, for flavor)
Instructions:
1. Grind the oats (if using rolled oats): If you're using rolled oats instead of oat flour, grind the oats in a food processor or blender until you get a fine flour-like consistency.
2. Mix the oats and water: In a mixing bowl, combine the oat flour (or ground rolled oats) with water. Stir well until you have a smooth, thick batter.
3. Rest the batter: Allow the batter to rest for about 10-15 minutes. This resting time will let the oats absorb the water and thicken the batter.
4. Preheat a skillet or griddle: While the batter is resting, preheat a non-stick skillet or griddle over medium heat.
5. Cook the flatbread: Pour a portion of the batter onto the preheated skillet, spreading it out thinly to form a flatbread. Cook for about 2-3 minutes on each side or until the edges are lightly browned and the flatbread is cooked through.
6. Repeat: Repeat the process with the remaining batter until you've made all the flatbreads.
7. Serve and enjoy: Serve the oat flatbreads warm or at room temperature. You can enjoy them with toppings like hummus, avocado, vegetables, or any other spread or filling of your choice.

Oats generally aren't gluten-free. I certainly wouldn't give these to my granddaughter who has coeliac disease.0

Well - the problem is not usually the oats themselves, more the mill in which they are ground … which may have been used for eg wheat. So for most people with coeliacs the answer is to buy ‘pure’ oats (Ie non contaminated) - as yes they are gluten free - - but not all….as some still react and indeed caution is required.
