Lunch meal ideas (for office workers)
The one meal I really struggle with when eating sensibly is lunch. I don't have access to a kitchen/fridge where I work, so I have to prepare something at home to take in with me.
Do you guys have any favourite lunch time meals that aren't too much hassle to prepare in the morning?

Once autumn kicks in for real I make soups. Make a big pot full the night before then heat in the morning, put into a wide mouthed flask and your good to go.
Soup making is easy & quick when you get the hang of it. Filling, healthy and tasty.
Also a big pot stored well will re-heat for a good few days giving you more lunches from your time than most other things.0 -

I am a pescatarian low carber and used to have exactly the same prob. Now every day I have half a tin of tuna mixed with either smoked salmon or tofu that I cook the night before. It may not sound too appetising but it is the highlight of my working day!
Tuna is fab lunch, maybe you can incorporate that?0 -
Tuna salad,with the john West no drain tuna so it isn't messy, and you can open it when you're ready to eat lunch - I always leave my slald out of the fridge at work, it tastes so much nicer at room temperature. If you have a microwave soup is good. Best thing? Good old fashioned butties, and I managed to survive about 12 years at school without a fridge to put my butties in, lol!0

If you have an ice pack, you could always bring a meal substitute drink! I work at a preschool and don't really have time to sit down and eat, so I've been bringing my Chocolate Whey protein drink. It really fills me up!0

i make my lunches the night before, but if you don't have access to a kitchen or fridge at work, that kinda sucks. most lunch boxes/coolers can keep stuff pretty cool for a few hour though, especially if you put one of those blue ice things in it.
check my diary, i packed a nice turkey and cheese sammich and an appl for lunch, and some yogurt and cereal and an apple for a snack.0 -

You could get one of those little chiller bags and pop a couple of ice wraps in if you are worried your food will turn without refrigeration?0 -
I make mine the night before and generally have a mix of the following to make a sort of salad lunch pack that i eat cold and with minimal fuss:
Spinach, smoked salmon, (cold) sausages, lettuce, cucumber, tomato, radish, celery, onion and other salady items, potatoes (boiled or jacket, both are good cold), tuna with light mayo, boiled eggs, cous cous, rye crackers, cream cheese, cottage cheese, small amount of pasta salad, ham, mushrooms, carrots, houmous, cheese.
Lots of meats taste good cold and can be cooked the night before. Couscous can be made into a salad with things likr tomato, onion and cucumber mixed in with a little chilli. There are lots of options but sometimes its difficult to think about lunch if you dont have access to a fridge or microwave (which is a pain!)
You could also try cereals etc.0 -

It's definitely a good idea to invest in good lunch storage. Containers, an insulated bag, and ice packs. I like to buy pre-cooked chicken. I can mix it up in wraps, salad, sandwiches, or pasta. If you can, prepare things on the weekend that you can throw together for lunch like cooking up some meats, preparing veggies, boiling pasta, etc. Preparing your lunch the night before can make the morning go a lot smoother.0

I should have mentioned, I already use a cooler bag with ice packs to keep my lunches cool. Nothing worse than a warm sandwich eh?
@crux - soups sound like a good plan, I think that's what I'll be doing when it gets a bit colder.
@Charrah - I do have tuna salad in a wholemeal pita sometimes, that's a good one. I did Atkins induction for ages, I'm so glad not to be doing uber low carbs now. That makes lunch even harder, sometimes I would have a cold omelette back then! haha
@Engineman312 - That sounds like something that would work for me. Having no fridge at work does suck!0
