I've been doing meal-prep Sunday for a while now and it's pretty rad.
You can adapt most recipes to batch cooking. Liquidy/creamy recipes seem to reheat the nicest. Things like soups, stews, chilis, curries, quiches, casseroles. Mason jar salads actually seem to last a full week in my fridge and stay crisp - check out Google on how to best layer your ingredients.
Here are some examples of things I've prepped lately:
- butter chicken with rice
- mexican shredded chicken soup
- pureed curry butternut squash soup
- french onion soup
- black bean, rice, bell pepper and chicken burritos
- pan-roasted root veggies
- spinach, blueberry and goat cheese salads
- greek salads
- sweet & sour meatballs with steamed veggies
- risotto
- havarti kale quiche
- ham and onion quiche
I usually keep enough portions in the fridge to feed my fiance and I for the following 3 days, then I put the rest in the freezer to keep fresh and pull them out to replenish the fridge as we need them.

Egg salad
Chicken salad
Taco stuffed bell peppers
Any kind of marinated chicken and roasted veggies
BLT wraps (prep everything but assemble day of)
Pulled chicken for salads
Marinated steak for salads
Chicken stir fry
Meatballs
No-bread philly cheesesteaks
Chicken fajitas bowls
Taco bowls
Broc cheese soup
Chicken cordon blue wraps

My go to meal prep is 18 hard-boiled eggs, 1 lb. ground turkey mixed with a Bird's Eye protein blend bag, a few servings of edamame and light tuna salad with celery & onion. I also pre-chop red onion (which I use for fajita egg white omelettes...just add fajita seasoning, spinach, 1 T. cheese and a slice or two of turkey or ham) and rip up a rotisserie chicken (which I use for flat bread "pizza" on Flat Out wraps or mix in with cottage cheese).1 -
I see that this is an older forum, but I came looking for some lunch ideas. I only have 15 minutes for lunch, and I'm looking for meal prep lunches that don't need to be heated up. Any non "salad in a jar" ideas would be appreciated!0
