Hi guys, just wanted to see what other opinions are like. I am on a 1850 calorie plan but some days I do eat 1500 calories and sometimes it eat my full limit, does that affect the weight loss process or should it be okay?

Eating slightly under your calorie limit occasionally is no big deal. Eating WAAYYY below habitually or as part of disordered thinking can get you in trouble, but the odd low day won't hurt you.
Push on! As long as you are losing weight at 1850, might as well eat 1850. Best of luck!

It's fine. Some days you may be over a bit. You want to look at your weekly number. Add up 7 days of calories and divide by 7 and this is your actual average daily amount and you want that number to be very close to your target daily amount2

So...the calorie goal that MFP gives you is just that - a goal. You should be trying to eat that much per day. However, being a little under or over randomly doesn't matter. If this is a routine/habitual thing though it can be unsustainable since your calorie deficit may be much larger than necessary.
But, 'some days'....if that means a few days/month - no big deal. 'Some days', if it means multiple days a week...then it might not be great in the long run. But that all depends on what it ends up making your overall calorie deficit/consumption, and what your individual calorie needs are.1 -
If you go to your food diary and hit the “nutrition” button at the very bottom, it will bring up a breakdown.
There’s an option to look at daily or 7-day view.
As long as my calories and macros are on track on a seven day average, I don’t stress.
Some days, I just don’t make goal, other days I can be 1,000 over. Likewise, I’m typically low on protein on “Doughnut Sunday”, but the average shows I make it up on other days. I generally make up my fat macro shortage on Sundays, too.
Some people actually “bank” calories during the week so they can enjoy a large dinner on the weekend. Just remember, expect a temporary carbs/water retention water weight gain if you go this route.
For this reason, I’ve learned my highest weight for the week tends to be around Tuesday, while my lowest is Saturday. Sunday is often my “makeup” day for low calories. Having the good logging records at fingertips takes the anxiety out because I can easily look to see what’s causing the yoyo.3 -
