My new favorite raw apple is Cosmic Crisp, which replaced my old fave, Honey Crisp.

I'm fixing to make apple butter with Cortlands, which are softer:

This recipe calls for apple butter, which my supermarket does not carry, but I was inclined to make it anyway.

    Yes it is. I'm working on an apple pie (individual tarts) to go with my rabbit liver mousse with Parmigiana Reggiano in the crust as well as probably a tuile from parmigiana and local honey infused with some kind of chili. Hopefully it'll be ready as a special by the weekend.

    I don't much like modern apples, which just seem to get sweeter and sweeter (and less nuanced/balanced) with each new variety.

    If I can get them (rarely), I prefer Winesaps. Granny Smith are a little too tart to be ideal for me, but I want some tartness/tang.

    Good apple butter is yummy. Even mediocre apple butter is decent.

    I love apple crumble, like my nan used to make using porridge oats on top for a crispy oaty layer.

    I just tried Cosmic Crisp this week and I like them! They are just right on the verge of being too sweet...
    My favorite that I tried last year was Autumn Glory. I haven't seen those this year yet.

    Made a recipe for roasted Gala apples with yellow potatoes last night. It was delicious.

    The apple butter was amazing! Note to self: next time, start first thing in the AM so you are not finishing up near midnight :lol:

    I looked at the reviews for the Brown Butter Apple Blondies (which I will probably make today) and noted that a lot of the reviews said this was more like a cake than a blondie. That's fine; I love the following old family favorite recipe, which has similar proportions of flour, sugar, butter, and eggs. Am curious to see how the browned butter, apple butter, and glaze kick it up.

    @AnnPT77 that recipe calls for Spencer apples, which were developed almost 100 years ago :wink:
