ShinyFraga's Microwave Berry (or Peach) Cobbler Mug
Ingredients:
~ 2 Tbsp. Splenda for baking
~ 2 Tbsp. flour
~ 1/4 to 1/2 tsp. baking powder
~ 4 oz. mixed berries (if berries are tart, sweeten with more Splenda until as sweet as you like)
~ 1 Tbsp. light margarine
~ 2 Tbsp. fat free milk
Preparation:
Melt margarine in large microwaveable mug.
Add Splenda, flour, baking powder, and milk to margarine.
Whisk well.
Add fruit on top of batter.
Cook on HIGH for 2 minutes.
(Just replace the berries with a 4 oz. snack size container of peaches for peach cobbler.)
Let cool for a few minutes and enjoy!
Makes 1 serving at 172 calories.

I made these Saturday night with peaches (my husband's favorite) and they were really good! I topped them with 2 TBSP of Fat Free Cool Whip. I will definitely do this again!0
