Healthy Birthday cakes

Does anyone have any ideas on how to make a healthy birthday cake? My son will be 2 in Jan and My daughter will be 1 in Feb and hubby wants to make their cakes as a special birthday tradition. I know family and friends on not on my diet plan but I don't want my kids to be hiked up on sugar. Hubby wants to make a "practice" cake sometime and I really don't want to because I know I will try to eat it all. Cake is one of my weaknesses. I agree that we should practice on one but maybe let him keep half and give the other half to someone else (Hubby is 5'10" and 130 lbs so he doesn't really need to go on a diet lol). Thanks in advance.

    Pillsbury makes wonderful sugar free cake mixes. :) Use apple sauce in place of oil and they'll even be low fat, too. :)

    Angel food cake with fresh fruit actually isn't particularly bad and is relatively low in sugar.
  • Maybe make something different (that you don't like) or something really dense (that you wouldn't eat a lot of) Like carrot cake, or pineapple upside down cake, or if you don't care for coconut, then put coconut in it? Definitely use apple sauce instead of oil though! Or you could try a *really* simple no bake chocolate cake that doesn't have anything too bad in it, and make it SMALL!

    On Hungry Girl she was saying you can make a cake with a can of diet soda, and a cake mix. No oil, no eggs, and lower in calories than a regularly made cake. Bake as indicated on the box.

    example - vanilla cake with a diet creme soda
    Chocolate cake with Diet dr pepper

    You can mix and match and I think it comes out to a tad over 120 calories per slice. I tried to find it on Hungry Girls website but couldnt find it.

    My kids experimented with the cake & can of soda and loved all the different combinations. They did sprite & yellow, dr pepper with chocolate, cherry coke with chocolate, I think they did one with root beer. Thankfully I don't care for cake:-) I second the pp that suggested angel food cake. For my dd birthday a couple years ago we did an angel food cake sliced with fruit in between the layers, frosted with some whip cream with more fruit on top. The kids loved it.
  • Please be weary of the sugar-free cakes. Just because it says sugar-free doesn't actually mean it is healthy. There are still sugars in it (example: sugar alcohols) They just take longer to raise your blood sugar (if you have a problem with blood sugar) My mother-in-law would make a angel food cake with crushed pineapple and top with some light cool whip...YUM! delicious :)

    That is unhealthier than making a home made from scratch cake that contains sugar........................

    To the OP: why not focus on making a home made cake with real ingredients. I have found with my nephews that if they eat something that is fresh made (no preservatives and other chemicals and food dyes) they don't get hyper and such.............

    If they eat something processed as suggested above in the quoted part, it affects them more.

    If you are looking for a healthy cake for the kiddos, google "healthy first birthday cake," there are loads out there! When my daughter turned 1, I made a carrot cake with applesauce as the sweetener for her and a regular cake for the guests. If you are looking for diet food, those hungry girl cakes are alright, but I say go for a regular cake and have a small piece. Throw the rest of the cake away or give it to guests as they leave. Another option is muffins because they look like cupcakes and with a little sugar free frosting they are sure to be a hit. Try pumpkin or carrot muffins, yum!
