Healthy Alfredo

I found this recipe on the Dr Oz web site, and modified it.

1 head of Cauliflower cut off the stalk and into small pieces
1 can 99% fat free chicken broth
Grated Parmesan Cheese. ( I am not sure on the oz, but it measured about 1.5 cups)
14 oz or 1 pound box Wheat Noodles
Onions (I used about a quarter cup of pureed)
Olive oil

Cook noodles as normal. - Sit to the side
Steam or boil cauliflower until tender

In the blender, place chicken broth and cauliflower. Blend until smooth.
In a skillet, cook onions in olive oil.
Pour blended cauliflower into skillet with cooked onion.
Toss in noodles
top with Parmesan cheese

Salt, pepper, garlic powder to taste.

The orginal recipe said this amount would feed 4.
I found the amounts to be pretty big, so for us, it was 6 servings.

    I'm sorry, I had intended to put the calorie counts at the bottom...

    I calculated it to be around 380.

    My picky 6 year old cleaned her plate!!!

    Awesome! I LOVE alfredo but the sauce was always so bad for my dieting! Can't wait to try this one. And only 380 cal/serving at 6 serving/batch? That means I can save some for lunches that week!
