Late night snacking

I get sooo hungry in the evening and it’s so hard not to eat everything I ignored eating all day!

I do get home from work around 10 pm and am hungry when I get home. I’m on my feet my entire shift so I know my body needs fuel but I’m also eating right before bed. I end up eating two dinners. One on my break and one when I get home!

What can I eat when I get home that won’t fill me up before bed.

What is your deficit including this late night eating?

You need to plan your food better. Have more earlier in the day and before work so you don't feel so hungry last thing at night. Hide unhealthy snacks and have healthier ones that are easier to reach. As a random example, popcorn (with no butter) is probably lower calorie than whatever else you may be reaching for late at night, and will help you feel fuller since it takes a while to eat. Drinking more water generally will help too. You also need to work through the late night mindset of, "I'll start a proper deficit tomorrow, not today."

Meal timing doesnt matter, your total weekly calories do. Your body repairs itself while sleeping so you still need nutrients.

I would just plan your meals so that you eat a bit lighter during the day and then have calories available for a late-night meal or mini-meal. Other than potential heartburn, nothing bad happens if you eat right before you go to sleep. Other than brushing my teeth, dinner is generally the very last thing I do before I go to bed. It hasn't been a problem while I was losing or while I was maintaining. If late night is a hungry time for you, lean into it and make a plan to accommodate that instead of fighting the urge all the time.

I'd try something like a tuna Melt or a turkey bacon sandwich on Ezekiel bread with a small amount of avacado.
