Mince stuffed peppers
I love the bolognaise mix of mince, mushrooms, onion, carrots in a tomato sauce but have removed pasta/bread from my diet... I'm thinking of making up the mix and stuffing it in a pepper.
However I'm not sure if I should roast the pepper in oven first, cook mince etc separately then bring them together at serving or just brown off the bolognaise mix quickly add the cold tomato sauce and stuff in the uncooked pepper... then put all in oven together to to cook?

What about adding it all to a giant-muffin tin with egg-whites as the binder and baking it? Serve the marinara over top with some more parm?0

This is one of my favorite sauces! Making stuffed peppers is a great idea. I suggest that you make the sauce first and let it cool. Then stuff it into the raw pepper and bake. I also like to take the left over sauce and make stuffed cabbage rolls.0

To make awesome stuffed peppers - steam the peppers first. I do that in a pressure cooker that has a steamer basket, so it only takes a couple minutes. If you steam them first, they get cooked, and then you stuff them with the cooked filling, so you only need to bake them for a short time to ensure everything is warm.
As for roasting... I'm not sure... however I know for sure steaming works really really well.

Sounds yummy.I would experiment make up the batch & cook half one way & other half the other & see which result you like better happy cooking!0

I always cook the mince separately first, add the sauce and whatever else you want, then add them to the peppers and cook in the oven for around 20 minutes.0

My mother makes it all raw with rice in the stuffing, she uses not only bell peppers but also tomatoes, Zuccini and many ppl also use eggplant, then she loads then a wide cooking pot, face down, adds more tomato sauce outside, and cook it on the stove on very low, everything will be very well cooked.
stuffing includes rice, minced meat, chopped onions, all the cores removed from vegetables, lemon juice tomato sauce and parcley, you can remove or add anything according to your preference.
some ppl bake it in the oven, but i think you will have to use cooked rice.0 -
Thanks guys.. I'll make up the mince tomorrow as I forgot to get it out of freezer to defrost... and I don't like how it goes if stick in microwave to defrost... having baked cod with sweet potato chips and green beans today!
The cabbage rolls sound a good idea too.. I have some baby leaf greens I could make little cabbage roll style things.. they never have instructions on though I guess I'd just wrap the mince and let the wilt for a bit in a pan?
I'm planning on freezing some of the mince.
I found a recipe for cauliflower rice too, but doesnt say how many calories I guess it would just be same as 100g raw cauliflower?0 -

I like cauliflower mash as a substitute for mashed potatoes.
You have me intrigued what is cauliflower rice?
Do you grate the florettes and just blanche and drain?
I think it's time to google lol.

This thread has given me loads of brilliant ideas - love the idea of bolognaise stuffed peppers, and cauli mash - must remember to have a go at making that - mine never worked brilliant though - not sure if the cauli was too al dente? Wonder how make cauli rice - never would have thought of that.0
