Blackened chicken recipe:

2 boneless skinless chicken breasts
1/2 teaspoon paprika
1/8 teaspoon salt
¼ teaspoon cayenne
1/4 teaspoon cumin
½ teaspoon thyme (you can leave it out though, it’s pretty potent!)
1/8 teaspoon white pepper
1/8 teaspoon onion powder
1/4 teaspoon black pepper (not in the recipe, but it's good so don't ask questions)

Preheat over to 350F

Combine all the seasonings together (measure extra spices so it really covers the chicken)

Take the chicken breasts and coat them lightly with cooking spray. Cover the breasts with the seasonings on both sides. Place in a hot skillet for one minute on each side.

Put chicken onto a prepared baking sheet and into heated oven for 5 minutes until juices run clear. It was more like 7-8 for us since ours were a little thicker. Oh, and don't overcook...overcooked chicken is just gross :)

Take em out and devour em.

The best part: 135 calories, 3g fat, 205mg sodium, 24.7g protein…oh and it costs about 5 bucks if you go for the organic chicken :-D
