I don't have a job that requires any activity but I walk a minimum of 7km at 3km/h every day (which is roughly 10k steps), though usually more (like 10-15km), while on my walkingpad. I don't want to be logging my exercise manually and would rather just set the activity level. My goal is to maintain my weight.

Set it to, "Active," if you don't want to log your steps as exercise.
I have a similar pattern and that's what works for me.
That will account for your regular daily steps. Don't log those steps after.
Then in 4-6 weeks adjust if your weight isn't doing what your Goals say it should be doing.

Some of us don’t use an activity level and just set our calorie goal manually. This works well if you use a TDEE approach and not the eating back exercise calories approach. As mentioned above, whatever you decide, review progress or lack of it after a month or so and adjust things around if necessary2

10k steps each and every day not logged separately corresponds to the activity level of active.
Review based on expected vs actual weight trend and adjust if needed3
