What to do with fresh beets?????

My local grocery store has an unbelievable deal on beets right now. I'd like to buy them, cook and freeze them. But honestly I've only ever had pickled beets before, so I don't have a clue what to do.

Can you help a girl out??

    Blanch them and put into freezer bags. Make a beet salad. What store you find them at?

    Roast them. Cut into wedges or chunks and drizzle with olive oil and salt and pepper. Bake in oven at a medium-high heat until fork tender. Delicious!

    If you have a juicer, juice them. I also like to shred them directly into salads, put them in a baking dish with some potatoes and carrots lightly coated with olive oil and bake them for a root vege medley. You can blanch them. Make a nice borscht soup. Slice them and steam them and put them in the fridge with some cilantro and parsley chermoula. Loads of stuff.

    roast them:
    wash
    don't peel or top and tail.
    wrap in foil
    roast at 180 degrees or med oven temp for 30-45 mins depending on size allow to cool a little and rub off skins (wear gloves) whil;e warm and eat as side vege, e.g. salad with watercress and feta

    that's great, thank you for the ideas.

    to the person who asked where, its at a sobey's in Ontario Canada. They currently have 10 pound bags of oinons, carrots and beets for only $2. each. I want to take advantage of that sale and freeze stuff for the winter.

    Roasted beets are great. With goat cheese and walnuts. Yum. You can make beet cake (like carrot cake) if your eating plan allows such things. There is borscht as well!
