High Protein Healthy Meals

Hey, everyone! I’m looking for some cost-effective, high protein and healthy meals to try out! The easier the better!

    Baked chicken with noodles

    Ingredients:

    Boneless chicken breast (thin or slice thick ones in half longways to an inch thickness)
    Egg noodles
    Sauce of choice
    Veggie of choice

    Utensils needed:

    Oven
    Cookie sheet with a metal cookie cooling rack
    Medium sized pot
    Colander
    Serving spoon/fork

    Directions:
    • Preheat oven to 350 degrees
    • Add a cup of water to the cookie sheet, place the cooling rack into the sheet (helps to spray with Pam or some other non-stick cooking spray)
    • Arrange chicken breasts on the cookie rack, top with choice of sauce (some sauces I've used are melted butter with garlic and seasoned salt, or a sweet BBQ)
    • Bake chicken for 25 minutes
    • While chicken is baking, fill medium pot with water 3/4 full, set to boil on stovetop, cook noodles per package directions, drain with colander
    • When other food is almost done, prepare veggie of choice...some popular ones in my house include corn off the cob, steamed Brussel sprouts, or a side salad

    Entire dinner takes 30 minutes start to finish to prep, half of that time sitting around waiting. One six ounce chicken breast with a cup of noodles and a cup of corn is under 600 calories with 60g protein.

    Chili with ground chicken! High iron, protein, fiber. I have my own complex homemade recipe, but it can be as easy as:
    .5 lb ground chicken
    1 can chopped tomatoes
    1 can kidney beans
    Seasonings

    Just had a huge bowl of my homemade chili for lunch (leftovers) and it was 550 cals and 40g of protein.
