Buy a spahgetti squash, cut in half and scoop out seeds. Preheat oven to 350 degrees and place squash center down on greesed cookie sheet and cook for about 30-45 min.
Mix alfredo sauce, green bell pepper, onion, shrimp, and laughing cow cheese slices and simmer until all steamed through.
Take out spaghetti squash and scoop out guts onto plate, it will shred like noodles. And place shrimp mixture on top.
For my calorie calculations I used for the WHOLE large plate:
2 cups spaghetti squash, 5 oz shrimp, 2 laughing cow original swiss wedges, 1/2 cup roasted bell pepper alfredo, slice of onion, and half a bell pepper... I couldnt even finish the whole plate. I could only eat half and saved the other half for about a hour later You can make it less calories by using light laughing cow wedges instead of original but I needed the calories today. You can also cut back on sauce because mine was really saucey and will do less next time.
