Greek Chicken Pita

Chicken Breast, no skin, 12 ounces (remove)
Bread, pita, whole-wheat, 1.5 pita, large (6-1/2" dia) (remove)
Oikos Organic Greek Yogurt, Plain, 3 oz (remove)
Cucumber (with peel), 1 cucumber (8-1/4") (remove)
Olive Oil, 1 tbsp (remove)
Lemon juice, 3 fl oz (remove)
*Fresh Mint, 6 tbsp (remove)
Red Ripe Tomatoes, 1.5 large whole (3" dia) (remove)
*Green Giant Spring Mix Salad, 2 cup (remove)
Greek seasoning (you can substitute Italian if you don't have Greek)
Garlic, 3 cloves



Cube chicken breast into 1.5" cubes. Marinate in 2 cloves of chopped garlic, lots of Greek seasoning, 1 tbsp olive oil, and juice of one lemon. Leave for at least one hour.

Make tzatziki: in a food processor, put half a cup of Greek yogurt, half of a seeded chopped cucumber, one clove or garlic, and a handful of mint. Pulse until no chunks are left. Refrigerzte for 30 min to let flavors meld.

Grill chicken chunks and serve in pitas with cucumber, tomato, and spring mix. Dress with tzatziki.
