Roasted Acorn Squash with Brown Sugar
Gina's Weight Watcher Recipes
Servings: 2 • Serving Size: 1/2 squash • Old Points: 2 pts • Points+: 3 pts
Calories: 121.8 • Fat: 3.7 g • Protein: 13.7 g • Carb: 9.9 g • Fiber: 2.1 g
1 acorn squash, cut in half, seeds and fibers removed
1 tbsp Smart Balance Light
2 tbsp brown sugar (to taste)
dash of ground cinnamon
Preheat oven to 350°. Rub 1/2 tbsp light butter on each side. Top with brown sugar and cinnamon. Place in a baking dish and add 1/4 cup water to the bottom of the pan. Cover and bake 50 minutes. Uncover and bake an additional 10 minutes. Remove from oven and allow to cool before serving.

Looks good.
I made carnival squash chips last night with pork chops.
One whole carnival squash, peeled, de-seeded, cut into large chunky chips, then put in a baking tray with splash of oil and a generous sprinkling of garlic and rosemary, stuck in the oven. Yummy!!0 -

This can be cooked in the microwave, also. That is how I do it.0

Looks fabulous. I make mine with some maple syrup brushed on the halves, then about 10 mins before they are done, I put diced pear and walnuts in the middle with some cinnamon. Soooooo good.0
