Healthy alternative to Mayo for salads
I just made a macaroni salad that had a great sauce which is a healthy alternative to mayonnaise-based sauces. The salad doesn't need much of a recipe -- just pasta (I used red-lentil pasta) mixed with diced fresh veggies (Bell pepper, cucumber, red onions, pickles, olives). For the sauce: 1 can white beans drained, 2 cloves garlic, 2 T lemon juice, 1.5 T mustard, 2 T tahini, 1 T cider vinegar, 1 t salt, 1/2 t pepper. put all in a blender and blend till smooth. It didn't really tase like mayonnaise, but it tasted *good* and would work for a much healthier alternative to mayonnaise for pasta salad, potato salad, etc. I do a lot of plant based cooking and was amazed that I haven't come across this before.

Saving this in my recipes to try, sans olives and taking.
I have used yogurt for dressing, but I love yogurt, and not everyone does. I also love white beane!0 -
OOPS -- i left out 1 ingredient. Also 2/3 c milk. (skim or any plant-based milk also works fine).0
