Toasted leftover grains (rice, bulgur, couscous, quinoa etc) is a great way to make lunchtime salads more filling.1 -
Egg Salad - chopped hardboiled eggs, light mayo (or could use fat free, plain greek yogurt), chopped white onion and chopped celery. Adjust amounts of everything to your liking and season with salt and pepper. High protein, low fat.3

I just made this about an hour ago.
6oz salmon marinated in low sodium soy and a drizzle of maple syrup for a couple of hours
Baked in the air fryer for 10 minutes at 390 degrees
I had a side of riced cauliflower with chopped onions and peppers

1g carb
8g fat

My lunch is pretty basic, but I really enjoy a tuna sandwich with jalapeno or buffalo.
I try not to have tuna everyday, so I typically alternate with a sliced chicken breast sandwich with spicy brown mustard.3 -
